Eat Salmon!
I love salmon but I will admit I do not eat enough of it. It is recommended to eat a cold water fish 2 times per week and I probably eat 2 times per month
. As I said I love Salmon but Will does not like it and since we do the majority of our dinners together it is often easier to eat the same thing. I know that is a total excuse and for while I was eating salmon 2 times per week. Last night I made salmon and tried out a totally different recipe which was totally on a whim and it turned quite well!
First, why is salmon so good for you? I am sure you have heard Salmon (wild caught is the best) is high in Omega-3 fatty acids which is an essential fatty acid meaning our body needs it to survive but our body does not make it therefore we need to consume in our diet. Salmon is high in protein, vitamin D, niacin, B12, and selenium. Eating salmon or other cold water fish (have higher omega fatty acids than warm water fish due to the cold environment that they live in) has impressive cardiovascular benefits and may lower blood pressure, decrease triglycerides, and reduce risk of heart attack. I was in the process of taking ingredients out of the fridge for a green salad and decided that I felt like some artichoke hearts.
Here is what I ended up doing: (1 serving – active time 5 minutes, cooking time ~12 minutes)
- 1 fillet salmon
- Italian seasoning
- 2-3 Tablespoons diced artichoke hearts
- 2 teaspoons salad dressing or olive oil (I used a creamy Caesar)
- Grated Parmesan cheese
I placed the salmon fillet skin down in a glass baking dish and sprinkled the fillet with Italian seasoning. I diced about 4 artichoke pieces (from jar packed in oil), then placed then on top the salmon. Then I drizzled a bit of creamy Caesar dressing and sprinkled the fillet with Parmesan cheese. I cooked the salmon on broil (550°F) in the middle of the oven for about 12 minutes. (I typcially just broil salmon with herbs and not any cheese
but the change was nice)




I served with a big green salad with zucchini, broccoli and shredded carrots. Bon Appetite!

I agree Ben, I love fish grilled. And Will needs to get over the whole "I don't like salmon thing"!

We love Alton Brown's broiled salmon recipe! It works just as well on the individually-packed frozen salmon pieces as it does on the beautiful whole piece in the recipe.
