Load Your Salad with Veggies

Food_Salad_Vegetables_240662_lFirst of all, I love salads. I have one almost every single night. I usually have red leaf, green leaf or romaine lettuce sometimes mixed with sliced cabbage and carrots (pre-made coleslaw) or sometimes I add spinach or just have a spinach only salad. I love the satisfying crunch of salads and how much you can eat – your meal looks so much bigger and more clagett-farm-clagettfarm-2732847-lcolorful with a big side salad 😉 .

I also like to load my salad with veggies. If you are having a side salad anyway then throwing in extra veggies is quick and easy then you do not have to worry about making/cooking another side of veggies.

My favorite add-ins are:

  • broccoli – I keep a bag of broccoli florets (super cheap at Costco) then I cut green_whiteground_broccoli_879684_lup even smaller
  • baby carrots
  • tomatoes
  • thinly sliced zucchini squash
  • diced red bell pepper.

I also sometimes add mushrooms, raisins, nuts, crumbled feta or goat cheese or other veggies I have laying around. Last night I had a spinach salad with bell peppers, broccoli, artichoke hearts, and feta with a light olive oil and balsamic dressing — mmmm so yummy. So good in fact I totally forgot to take a picture!

So, experiment with your salads and pump your salad up with extra veggies – the extra fiber will be filling and we all need to get more veggies in our diet :mrgreen:
